Best Barbeque Joints in Texas?

I love barbeque, and we have some decent places around here such as Pinehurst.  However, I recently ate at Cooper's in Llano.  It puts anything we have around here to shame.  In my opinion, places like Coopers and Salt Lick are in a league of their own.  Its really not even fair to compare local places to a place like Cooper's.

Went to Heavy's BBQ in Hondo, Tx over the summer. I can see why they got such a good rating in Texas Monthly magazine. The brisket was excellent.

BTW, does anyone have any good brisket recipes or techniques they would like to share?

Just added this one to my list. Thanks for the info. Brisket is the principal means by which I judge a Barbeque place.

I would help with the second part of your post but I'm much better at eating it than preparing it!
