My vote is for Anahuac's William Dotson.  I know it may seem crazy, but if the offense there could get it right they would have been OK.  Anahuac's D was always stout early, just would get wore down during the courses of games.  I am a basketball guy, but this was really obvious.  Also I think he is a great teacher of the game and is a fantastic person.  This is why Coach Dotson gets the nod from me! ;)

Coach T at WOS is good but lets not forget about WT Johnston at Newton a very good defensive cordinator there always has that eagle defense ready to play always ranks high in total defense every year.

Jeff Jones from Huffman  is a great one but not a whole lot to work with. Gets the most out of his talent and the kids love the man.  ;D

I AM NOT SAYING THAT THE DC'S AT WOS AND NEWTON AREN'T GREAT COACHES.  BUT ANYONE COULD BE A GREAT DC WITH THE TALENT AT THOSE TWO SCHOOLS.

IT'S WHEN YOU TAKE BELOW AVERAGE KIDS AND USE A SCHEME THAT HELPS THEM ACHIEVE SUCCESS.  THAT TO ME MAKES A GREAT DC.  THAT IS WHY WILLIAM DOTSON AT ANAHUAC GETS MY VOTE.
