So, why do refs call plays dead when the d-lineman jumps offsides and the ball is snapped. 
 

I know there is a safety thing where you don’t want to let a kid get hurt when they do that and maybe maul a QB....but is it ref discretion to let the play go for the offensive freebie?

this crew had an early whistle on an offsides that Huffman benefitted.

Defense jumps into the neutral zone and unabated to the QB, officials kill the play. Total judgment call to protect the QB. Dont want my QB takng a free shot. Safety is priority. If defense does not have a free shot, refs will let it play out. Total judgement call.
