Gumbo

Since it’s resolved that my gumbo (chicken&sausage, Shrimp&Crab or combination) is the best in this area, who else on here comes in 2nd?

My wife cooks a mean gumbo, puts crab legs in it!

Makes me want some just talking about it 😂😂😂

Only caught about 5 crabs a couple weeks ago. Added the cleaned crabs and shrimp and Tasso to a real dark roux.  Had it for the 2nd day in a row today. Probably gonna have it for lunch tomorrow too. Can’t get enough.

We always make potato salad with gumbo. I love to pour the roux on top like gravy on mashed potatoes.

Gumbo is always better the 2nd Day! The marination process is complete by the 2nd day! Man my wife’s gumbo is legit! My 2 boys always beg my wife to make gumbo since they learned how to talk. Love me some homemade fried shrimp patties on the side with potato salad.

You are exactly right about the 2nd day being better. That’s a gumbo competition secret (cheat). Cook the regulation pot of gumbo on-site. Sneak a small batch made the day before to use for what you turn in.

My old neighbor was authentic, couldn't understand half of what he was saying. Just him and his wife, they only knew how to cook for 10 people. So they would knock on the door unannounced, with a big pot of gumbo and homemade bread. One time, my dad and I, must have spent 20 mins trying to dig out the meat before we realized there was nothing but okra in there. All we had was Italian sausage, from Nick's of course. He cooked it up and dropped them in. Honestly the strangest gumbo I've ever had, but a great memory.

I make a mean shrimp and crab meat gumbo. Fed some blue hats back at the old Texaco Chemical (Huntsman now). Most were coonass and they complimented me on my gumbo. I figure that was good enough for me. I like mine with rice, but potato salad is good too. Had to have potato salad for them guys. Lol

My etouffee is pretty good too. I don’t claim to be the best, but I have never had a complaint.

We happened to find some La crawfish (complete with fat) at Sams.   My wife made (some of?) the best etouffee I’ve ever ate.  Literally, my mouth is watering as I’m posting this.😛😛😛
